Cabernet Sauvignon from Walla Walla and Yakima Valley. 92% Cabernet Sauvignon, 7% Petit Verdot & 1% Cabernet Franc. Dark plum and roasted pecans lead to an explosive mid-palate including bramble berries, ripe currants, and black cherry. The soft texture builds and accentuates a long finish with hints of vanilla. This Cabernet is a small lot (4 tons 231 cases) combination of 27+ year old vineyards between Yakima Valley and Walla Walla. Most notably Aria Vineyard and Elephant Mountain Yineyard. It is and crafted and aged in barrel for 19 months. Aged in 100% french oak, roughly 35% new puncheon.

Vineyard Notes
Aria Vineyard is a boutique, family-owned vineyard taking advantage of the unique terroir that is Walla Walla's Southside. Planted in 1996 with Cabernet Sauvignon and Merlot grapes. Sunny, clear location overlooking the Blue Mountains and Oregon to the south. Elephant Mountain. The vineyard sits on a series of gentle, southern-facing slopes at elevations from 1320 to 1460 ft. The vineyard is located above the irrigated portion of the Yakima Valley and is surrounded by dry land shrub steppe. The vineyard has a unique micro climate, perfect for growing and maturing wine grapes. Established: 1998
Production Notes
In the spirit being a bit healthier, conscious and intentional about what we consume in the world all of our currently available wines go through a rigorous production protocol aiming to eliminate physiological issues with red wine consumption not related to alcohol. We Intentionally Source our Fruit. We use ORGANIC/SUSTAINABLE Vineyards using regenerative farming practices and have ZERO tolerance for glyphosate(Round-Up) use. We select our yeasts intentionally to mitigate myco-toxin, mold growth and produce low to zero amounts of Histamine. Yeast inoculation timing is also important. Wines are ADDITIVE FREE and 100% VEGAN. Absolutely no animal products are used for fining or otherwise. NO ADDITIVES or enzymes are used to augment protein stability, flavor, mouthfeel, aroma, texture, or color. Our wines are fermented to "Dry" as in SUGAR FREE, and no other forms of sugar are added ever. Sulfites are used sparingly having a target of 35-50ppm for anti-oxidative effect and age-ability. All WHITE AND RED WINES are FILTERED to .2 microns for biological stability. Our medical grade micro-filtration system removes, Pollens, Molds & Spores, all other Bacteria, Wood Burning Particles, Dust Mites, Insecticide Dusts and more. We have worked very hard to develop and bring our products to market with this protocol. We hope you can enjoy our wines comfortably and as always please drink responsibly.
Winemaker Notes
92% Cabernet Sauvignon, 7% Petit Verdot & 1% Cabernet Franc. Three tons of Cabernet Sauvignon from Walla Walla and one ton of from Elephant Mountain went through primary fermentation about a week apart in early September due to the extreme heat the PNW experienced this year. Both saw 32 days extended maceration and were blended just prior to bottling. The small amounts of Petit Verdot and Cab Franc bulked out flavor and mouthfeel that we felt the wine needed due to the lack of intensity we would usually get from a longer growing season. In other words it was a shorter season than usual.
