Conley Vineyard holds 20 yr old clone 1 & 2 Tempranillo in about a foot of dirt over cracked Basalt, the slopes face south east for great early day exposure and the elevation is at about 1500 ft. The higher elevation offers a slightly cooler climate allowing the grapes a longer and steadier growing season and great flavor development.
In the spirit being a bit healthier, conscious and intentional about what we consume in the world all of our currently available wines go through a rigorous production protocol aiming to eliminate physiological issues with red wine consumption not related to alcohol.
We Intentionally Source our Fruit. We use ORGANIC/SUSTAINABLE Vineyards using regenerative farming practices and have ZERO tolerance for glyphosate(Round-Up) use. We select our yeasts intentionally to mitigate myco-toxin, mold growth and produce low to zero amounts of Histamine. Yeast inoculation timing is also important. Wines are ADDITIVE FREE and 100% VEGAN. Absolutely no animal products are used for fining or otherwise. NO ADDITIVES or enzymes are used to augment protein stability, flavor, mouthfeel, aroma, texture, or color. Our wines are fermented to "Dry" as in SUGAR FREE, and no other forms of sugar are added ever. Sulfites are used sparingly having a target of 35-50ppm for anti-oxidative effect and age-ability. All WHITE AND RED WINES are FILTERED to .2 microns for biological stability. Our medical grade micro-filtration system removes, Pollens, Molds & Spores, all other Bacteria, Wood Burning Particles, Dust Mites, Insecticide Dusts and more. We have worked very hard to develop and bring our products to market with this protocol. We hope you can enjoy our wines comfortably and as always please drink responsibly.
2021 was an incredibly HOT growing season over all. That being said Naches Heights fruit still came in mid-October. The cooler elevation really helps with hangtime. Ripeness is an indication of appropriate sugar levels but not maturity, you only get that with time on the vine. Maturity of fruit is ALWAYS better for more complex aromas and flavors.
